The sbrisolona cake is the symbolic dessert of the province of Mantua, to which are added, also in the area of the morainic hills of Garda, the sugol, a grape must pudding, the chisol, a homemade donut to be dipped in moscato, and, for Carnival, the frétule, classic pancakes cooked here in lard, and the lettuce, sheets of fried dough with the addition of sugar. Typical of Castiglione delle Stiviere are the Anello di San Luigi, a soft donut covered with crunchy almonds and icing sugar dedicated to St. Louis Gonzaga, and the rare biscutì de le mòneghe. Cavriana is instead renowned for the ancient tradition of the San Biagio cake, filled with native almonds. Almonds are also present in the Mantua version of chocolate salami. The rose cake has courtly origins while the patacia, a pancake sprinkled with sugar, is popular. A “niche” production and very high quality. In Pozzolengo the “Pozzolengo biscuit with spelled flour” is prepared.
