Capunsèl of Solferino
The most characteristic specialty of Solferino cuisine is Capunsèl, a tasty elongated dumpling, made with breadcrumbs, eggs, butter, garlic, onion, salt and pepper, to be served as a first course. The Capunsèi of Solferino are distinguished from those prepared in other municipalities by the addition of crumbled amaretti biscuits to the mixture, in an ancient local variant which dates back to the times of the Gonzaga and which the Confraternita del Capunsèl of Solferino tries in every way to promote and protect, celebrating it in particular every year at the beginning of July with a four-day festival.
