Capunsei of Cereta
The king of the menu are the capunsei, a kind of gnocchi whose mixture of breadcrumbs, parmesan and boiling broth was once inserted into the capon, hence the name.
Capunsei (sometimes also called Caponsei) are typical of Cereta (a hamlet of Volta Mantovana), a small village in the upper Mantua area, and are also eaten in Goito, Castel Goffredo and Solferino (where the Grande Festa del Capunsèl is held).
