Anello di San Luigi

The Anello di San Luigi (The Ring of St. Louis) or Anello dei Gonzaga is the typical dessert of Castiglione delle Stiviere. It is a soft donut made with butter, eggs and covered with flaked almonds. The recipe has been revisited by the imagination of local pastry chefs who propose curious variations. The Ring of Saint Louis takes its name from the shape of the collar worn by the World Patron Saint of Youth, to whose memory the dessert itself is dedicated.
